Israeli Haroset




A thick sweet jam used during the Passover Seder, but I eat it any time! 
I have been making this Passover Haroset for years; it is based on a version of my husband’s Mothers’ recipe. He remembers the taste more than the exact ingredients.



Recipe:

Ingredients:
1 cup chopped dates
1 cup of raisins
2 tablespoons sugar
½-1 teaspoon ground cinnamon
½-1 teaspoon ground ginger
1/8-1/4 teaspoon freshly grated ginger
¼ cup ground almonds (or chopped walnuts)
½ cup sweet kosher wine divided
¼ cup water

Lightly chop raisins with large knife, put raisins, dates, fresh ginger, water, sugar and half of the wine into a sauce pan. Bring to a boil then lower heat to simmer, stirring fruit until soft and thick. Using a fork or potato masher, smash mixture until fruit looks like a paste. Stir in the rest of the spices, add wine and ground almonds. Chill to serve
