Baked Salmon With Citrus Rhubarb Sauce

Easy baked salmon, with citrus rhubarb sauce; no extra oil or butter needed!

Wild Alaskan salmon! Salmon pink, like a bright Alaskan sunrise above the snowy mountains!
Whatever the season, fresh or frozen, salmon tastes delicious with a fruity menagerie of flavors.

Baked Salmon
Recipe:


Prepare rhubarb sauce (the rhubarb sauce can start baking in the oven, while the fish is being prepared).

2 salmon fillets or steaks
Juice of 1 lemon
2 tablespoons vegetable broth
¼ teaspoon Creole seasoning
¼ teaspoon coriander
1 teaspoon fresh dill
Pepper to taste

Preheat oven to 350˚
Place the fish in an oven safe dish; sprinkle on the fish all the above ingredients except for the rhubarb sauce; cover with foil. Bake the fish for about 20 minutes (longer if the fish are very thick). The fish flakes easily when done.
Top the fish with half of the rhubarb sauce; serve on a plate of wild rice along with collards, your favorite greens, and a small side-serving of rhubarb sauce.
