Imagine hot -- out of your oven, fresh, steamy, chewy pita
bread. Split these open and fill with your favorite things. Or if the smell of
hot fresh bread is so tantalizing just take a big bite and enjoy!
Recipe for Pita Bread:
1 package rapid rise yeast
1¼ cups warm water
3 ½ -4 cups unbleached white flour
½ cup whole wheat flour
1 teaspoon salt
½ teaspoon sugar
In large mixing bowl pour in yeast, ¼ cup of the total
water, salt and sugar, mix well. Stir in flours and rest of the water with a fork
or wooden spoon until too stiff to mix. Pour dough out on to a floured board
and knead, adding more flour until a stiff and smooth dough is formed. Shape
into a ball and place in bowl, let rise in a warm spot, about 1 hour. When
dough has doubled, punch down and knead again for a minute or two. Pull off
pieces of dough the size of a medium baking potato and roll into a ball.
Flatten each ball on a well floured board with the tips of
your fingers; about ¼ inches thick. Place these breads on a baking sheet
sprayed with no-stick cooking spray; continue with the remainder of the dough.
Leave a few inches around each pita as they still need to rise.
Preheat your oven to 500˚- this is a very hot oven
Let the pita breads rise till they are puffy looking, about 30-
40 minutes, put the pans in the oven and bake for 10 – 15 minutes.
When done let cool on a wire rack covered with a clean towel.
